Olive Balls

Very festive, because of the white, red, and green colors. Tasty as well.
Also it is ridiculously easy to make them.

You will need:

  • 2 (8 oz) packages cream cheese, room temperature
  • a jar pimento stuffed green olives
  • 1/2 teaspoon salt
  • 1/2 lb blended pecans

Directions

  • In a large bowl, using hand mixer with dough hooks attached, mix together cream cheese,
    salt, and 2 tablespoons juice from the olives until well blended
  • Refrigerate for about 30 minutes, until firm.
  • Cover each olive with cream cheese mixture, form a ball.
  • Roll each olive ball in pecan.
  • You can serve them as they are, or cut in half and arrange them cut side up.
  • Hint. Next time I am using Jumbo jalapeƱo stuffed olives.
