Christmas Pork Roast

If you are looking for a Christmas dinner ideas, look no further. This is a roast that smells, and taste like Christmas. It can be the center piece of your Christmas table.

You will need:

  • 4 Lb boneless pork loin roast
  • 4-5 whole cloves
  • 1/2 apple – sliced
  • 32oz (2 cans) whole berry cranberry sauce
  • 16oz chicken broth
  • 2 tablespoons ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1 teaspoon ground ginger
  • 1 orange – zested
  • salt & pepper to taste

Directions

  • Place pork roast into a roasting pan, push whole cloves into meat.
  • Cover with apple slices
  • In a large bowl, squash cranberry sauce, using potato masher.
    Add chicken broth, cinnamon, nutmeg and ginger. Stir well.
  • Pour about half of the cranberry mixture over the pork. Cover with aluminum foil.
  • Preheat oven to 400F.
  • Bake for 30 minutes.
  • Pour the rest of the cranberry mixture, and sprinkle with zested orange.
    Return to oven.
  • Bake until meat thermometer reads 145F.
    To take the measurement, insert thermometer in to the center of the meat.
